Kale: Because Screaming Into The Void Isn't Breakfast
Hello, Locavores! I hope y’all didn’t melt over the weekend. This no A/C in my car or my apartment situation is for the birds. Then again, the birds are probably hot as Hades too. I take it back. Sorry, birds.
Today I’m here to talk you off a very leafy cliff. Or maybe onto the leafy cliff. I’m not sure where I was going with that.
Alright, Locavores, grab your snack and your readers (I see you squinting) and let’s get into it.
You know how some mornings a cup or two of coffee is perfectly sufficient, and other mornings you could fall into a vat of radioactive coffee and your only superpower would be managing to speak in full sentences during a meeting?
Yeah. Me too.
Apparently coffee isn’t a sufficient breakfast (who knew?) and you need, like, balance and stuff. Fiber. Protein. Some vitamin C. You know… food with actual nutritional value that can fuel you through your day and not make you have a panic attack by 10 a.m.
Enter: kale.
I know, I know. Kale is the annoying overachiever of the produce world. The Hermione Granger of your fridge. The vegetable version of someone who runs five miles before work and drinks chlorophyll water for fun. But listen—this leafy green is legit.
We’re talking:
Vitamin C
Vitamin K
Fiber
Calcium
Iron
Antioxidants
And unlike your third espresso shot, kale won’t spike your cortisol and send you into an anxiety spiral. Small wins, folks.
Okay but like… how do I even kale?
Glad you asked. No one’s expecting you to raw dog a kale leaf. Here are a few zero-effort ways to sneak it into your Monday (and make yourself feel like the kind of person who uses words like “nourish” unironically):
Massage it: Seriously. Rub a little olive oil, lemon juice, and salt into your kale like you’re apologizing to it. It softens, gets sweeter, and suddenly your salad doesn’t taste like resentment.
Sauté it: Garlic, olive oil, red pepper flakes. Add an egg or toss it over toast. Now you’re basically a brunch chef.
Smoothie it: Add a handful to a banana plus pineapple smoothie and poof—can’t taste it, but your organs know. Your organs are grateful.
Toss it into literally anything: Soup? Pasta? Tacos? Lasagna? Yes. It’s the duct tape of vegetables.

Savory Kale & Quinoa Breakfast Bowl with Avocado and Lemon-Tahini Drizzle
Ingredients:
1 cup cooked quinoa (leftover from last night = bonus points)
1 handful kale, de-stemmed and chopped
½ avocado, sliced
1–2 tablespoons hummus or soft-boiled egg (optional protein pick)
Cherry tomatoes, halved (about ¼ cup)
Salt & pepper to taste
Lemon-Tahini Drizzle:
1 tablespoon tahini
Juice of ½ lemon
1 teaspoon maple syrup or honey
Splash of water to thin
Pinch of salt
Instructions:
Massage kale with a tiny bit of olive oil or lemon juice until it softens a bit. You can do this while sipping your coffee and contemplating your to-do list.
In a bowl, layer quinoa, kale, avocado, tomatoes, and optional protein.
Whisk together drizzle ingredients in a small bowl until smooth.
Pour dressing over your bowl like the health goddess/god you are.
Eat cold or room temp. Bonus: this also makes a killer desk lunch if you double it.
Chopped Kale & Cucumber Yogurt Bowl
Ingredients:
1 bunch kale, finely chopped
1 large cucumber, diced
½ cup plain Greek yogurt (or coconut yogurt for dairy-free)
1 tablespoon olive oil
Juice of ½ lemon
1 garlic clove, minced
Salt & pepper to taste
Optional: chopped dill or parsley, chili flakes for heat
Instructions:
In a bowl, mix yogurt, olive oil, lemon juice, garlic, salt, and pepper.
Stir in kale and cucumber.
Add herbs and chili flakes if using.
Let it sit 10–15 min so the kale softens slightly in the dressing. Serve cold, maybe with pita chips or straight outta the bowl with a spoon 😉
