Cranberry Orange Relish

noun \ˈre-lish\: a seasoned sauce that is used to add flavor to other foods and that is made of chopped fruit or vegetables; enjoyment of or delight in something; a feeling of liking something

Every year my family requests this dish at our Holiday dinners. It’s my special contribution…and it’s so quick and easy! If there is any leftover, we eat it over plain, organic, local yogurt from Prosper’s Farmstead Creamery. Maybe it will become a new tradition in your family too! ~Rainbow

16oz fresh or frozen organic/local cranberries
1 med. organic orange
3/4 c. organic sugar

Slice unpeeled orange into eighths. Remove seeds. Place 1/2 of the cranberries and 1/2 of the orange in food processor or blender. Chop into small bits, but do not puree. Transfer to bowl. Repeat with remaining 1/2 of cranberries and orange. Stir in sugar. Store in refrigerator or freezer. Makes 2 1/2 cups relish. Best made at least one day in advance of serving.
